Too many Courgettes and garlic soup!

Ingrediants - One largeish onion, six courgettes (average size or equivilant), one potato, a whole head of garlic, vegetable stock

 

Method - Chop and fry the onion in a little olive oil until transparrent. Chop the courgette, potato and garlic and add together, stir until the courgette is soft. Add enough vegetable stock to cover the vegetables by about an inch. Simmer until the potato is cooked. Blend until smooth. Lovely served with a little grated cheese and / or a cheese scone. Freezes well.
