beetroot pie

delicious!! 1. take 4 medium size beetroots, or their equivilants. Peel and grate into a bowl.
2. add two grated red onions.
3. add 1/2 a lb of strong grated cheddar.
4. add one medium jar of mayonnaise.
5. mix together well.
6. prepare pastry case, wholemeal is nice.
7. put mixture into case (12 inch diameter flan dish or similar)
8. optional to put mixed sunflower / pumpkin seed on top. bake in oven gas 5 for about 45 minutes

N.B. option of adding more / different grated vege, for example courgette or carrot.
